This technique consists of cooking the food directly in hermetically sealed glass jars in a traditional oven. Aromas and flavours are preserved through the vacuum seal and the product can be stored for a long time without using any preservatives.
After jar cooking, the dessert is naturally preserved for many months, thus maintaining the fragrance, aromas and humidity of the dough that is typical of a freshly baked product. Paired with the distillates, the jar cooking technique guarantees a prolonged preservation of the product allowing for production optimisation.
