The chestnuts are hand-picked, washed in water to eliminate spores and impurities and left to soak in order to stabilise the starches, reduce the presence of tannins and refine the flavour of the fruit. After peeling, they are cooked in water which is then used to prepare the sugary syrup used for candying.
